Mexican Casserole


The other night I was seriously lacking in inspiration for dinner.  It was just after lunch time and I wanted to plan ahead because that always makes things easier.  So I put 4 chicken breasts into the crock pot with some taco seasoning.  They were cooked by dinner time and ready to have something done with them, but what?  So I started throwing together some random ingredients and ended up making a Mexican Casserole that my kids devoured!! They all even asked for it again the next day for lunch.  The picture may not do it justice, but it tasted amazing!  Here's the recipe-
4 chicken breasts- cooked in the crock pot with Taco seasoning (I buy the tubs of this seasoning from Costco, but it was probably equivalent to 1-2 packets or 2 Tablespoons)

Once cooked I shredded the chicken in my kitchen aid- BEST way to shred chicken ever!!

Cook 2 cups of rice in 4 cups of water.

Then mix together in a large bowl:

Chicken
Cooked Rice
1 can of Corn
1 large can of cream of chicken soup
2 cans of diced tomatoes (I always buy the seasoned ones)
You can also add a little more taco seasoning, or other mexican type seasonings of your choice.

place in a casserole pan and sprinkle Motzerella cheese on top.
Bake at 350 until the cheese is melted.
Put a little sour cream on top!

This recipe made 2 casserole pans, I ended up freezing one (that we ate the next day).
I bet you could combine the ingredients into the crock pot to all cook together even for a easier dinner!  .... humm..... something to try in the future.
